Rustic and fresh endive salad.

Just so delicious when it is well dress! So fresh and crunchy! I just love to have some fresh crudities while serving any kind of meal. Endives will be one of those that I will often prepare. Try to use the Dijon Mustard from “Maille” I feel like it has just to perfect kick for the bitterness of the endives. I will never say it enough when I share a salad recipe, but I love to mix olive oil and peanut oil for dressing. For the oil, it can be peanut or avocado even canola oil will work. But always try to finish with a touch of olive oil, it ends the flavors just so perfectly. Let’s get to the recipe! Don’t forget to leave me your feedbacks and comment. For 4-6 person

4 nice and shabby endives

2 Tbsp honey

2 Tbsp olive oil

2 Tbsp neutral oil

salt and pepper to taste

Handful raisin

Handful walnut

Method

Wash and take off the first leaves of the endives. cut them in half lengthwise then other half and finally in dices. Place them in a large bowl. In a small bowl mix together all the ingredients for the vinaigrette except for the walnut and raisin. Very well mix to combine. When it is time to serve add the raisin and walnut if using. Voila it is so very nice and tangy salad to serve along barbecue or grilled fish. You can add a 1/3 cup of feta or blue cheese. It is just a lovely salad loved n’y everyone.
