My lovely roasted chicken with orzo pasta!

Orzo pasta! it’s delicious and a keeper for sure!! Serve in one dish! Beautiful colors and so unusual flavors! For my dear French fellows! The recipe call for Adobo Sauce! which is a paste or marinade made from chili peppers, vinegar, herbs, and spices. You can find it probably on amazon.com or just find a nice smokey and pepperish kind of relish, or maybe some marinates smokey pepper or paste that you can use for this recipe! voila! Let’s just get to the recipe! Let’s not Bla! Bla! Bla!!!C’est partir!

Ingredients

8 chicken thighs (bone-in or out)

Marination

1/2 cup olive oil (maybe a little more) 100ml

1 tbsp garlic powder

1 tbsp chipotle powder ( find it on Amazon) or any Smokey and spicy, spices powder that you like! 

1 tbsp paprika 

1/4 tsp salt

1/4 tsp pepper

Preheat the oven to 400F. 200C.

Prepare a baking sheet covered with aluminum foil and parchment paper It makes it easier to clean after 😊) Set aside. 

In a small bowl mix together the olive oil, garlic powder, chipotle powder paprika, salt and pepper. Stir well to combine. It should be a nice and smooth thick spread. 

Take your chicken, wipe it dry and place it skin down on your prepared baking sheet.  Take the spread and with a kitchen brush, brush the chicken uniformly.  Leaving some marinate for the second step. Bake for 40 minutes then flip over, take the remaining spread and brush It all with the rest of the marinade and bake it another 40 minutes or until ready! (It needs to reach an intern temperature between 165-175F) (75C to 80C) If you feel like you’ll need some more spread, so you can add a little more olive oil to mix the spices together again! 

Prepare the orzo! 

1 pack orzo 1lb 500g

1 onions

4 cloves  garlic crushed

1 1/2 tbsp tomato paste!  

1/2 cup of white wine! (I used Japanese white cooking wine! Delicious!) 120 ml

3 large tomato cuts in very small diced

4 cup chicken broth 1L

2 cups water 500 ml

Salt pepper

1 small can of adobo sauce (we just need one or two pepper from it) Or any nice smokey marinated bell pepper can that you like!

In a small bowl, prepare the same spices that we used for the chicken with the same quantities and set aside. 

Cut the onion very thin, crush the garlic . Prepare a large skillet with olive oil, a nice amount, and heat until it gets well hot. It’s just to beguin. Put in the onions, give it a mix, and let it cook for 1-2 minutes mixing all the time,then reduce the heat to medium and let them cook until all golden, stirring once in a while! Once that is done add the crushed garlic, let it cook for 1-2 minutes, pour then the honey, stir and hit up the heat just a few seconds and pour the wine in, let it evaporate, always while stirring. Reduce the heat and add the spices, the chipotle pepper and the fresh tomatoes diced. Mix well 

Pour the orzo in and season with the salt. Give it a stir. Now to cook the orzo you will need 6 cups total of liquid between the broth and the water. And it should take a bout 20 to 25 minutes to cook it. You are going to start cooking your orzo by pouring this liquid in three times. The concept is to stir all the time until the liquid is completely absorbed into the orzo before adding the next quantities.Once all the liquid has been poured the orzo should be ready. You will maybe have to play a little with the heat. But it is mostly cook on medium low heat. Take the chicken and place it on top of the orzo. Pour the remaining juice from the chicken into the pan. Check if the liquid is well combined by passing your cooking spoon here and there. Time to serve! A generous spoon of orzo topped with a piece of chicken !! Some fresh chopped cilantro! I kind of put a lot on top! It’s delicious!! A splash of lemon juice, if you like that tang!!!  Bon’appetit
