I almost passed this season! I always do something new with asparagus! It was one of the vegetables we got tested in cooking classes. The bowl of ice cream ready on the side with a little water just to dip into the asparagus once the cooking is finished! Perfectly cooked asparagus is just heaven! This time my oven was on and the idea of roasting them took me! Although it takes 15-30 minutes. depending on the size of your asparagus, the texture is slightly crispy and the cooking and just perfect! “C’est parti”
For the asparagus
I took 2 bunches ! The end of season is just beautiful! Cut the end about 2 inches and discard. Rinse the asparagus and place them on a baking dish, pour water just enough to cover the asparagus half way. Drizzle some olive oil, salt and pepper. Switch on the oven at 450 and once it came to temperature , place the dish on the middle racks. Roast for about 30 min. The truth is that I really did found some huge ones at the market that day! Just start checking yours after 15 min or so. Once there are just perfectly tender. Take the dish, pour out the water and put back the dish on the highest rack for about 2-4 minutes! Just to give a nice roasted on one side of them.You can drizzle some Parmesan cheese just when they come out from the oven, before placing them on the serving plate! In the meantime prepare your vinaigrette!
For the vinaigrette you’ll need.
1 nice shallot very thinly sliced.
1 tbsp mustard
½ tbsp mayonnaise or sour cream
2 tbsp olive oil
2 tbsp peanut or any neutral oil
Salt and pepper to your taste
Shake all that into a jar and set aside. In the fridge is the best until you serve.
You can have a little fun by toasting some slivered nuts or chopped very thinly some dates or any dry fruit. Just to top the asparagus with. I did it with some almonds and micro greens. Dress the asparagus with the vinaigrette and top with some of it! Delicious and so fresh! It comes so perfectly with grilled fish! Enjoy and “Bonne cuisine”
