Stunning rice and vegetable recipe

I cook rice all the time! Kids love it. So now and then I’d like to give it a little extra spice and more if my imagination is in a good mood. Some shredded carrot and almost cooked lentil did the tricks! Kids love it. I found it absolutely delicious, unusual, truly full of flavor. Just one important point make sure the lentil is really almost cooked. Uncooked lentils are impossible to eat!!! Let’s get to the recipe.

Ingredients.
2 cups (I use mason jar 8oz) of jasmine rice.

3 ¼ cup of cold water (with the same mason cup!) 

Large onion wash peel and finely sliced. 

(I prefer than chopped for this recipe)

½ cup of shredded carrots

½ Cup cooked green lentil (cook them “al denté”) it will finish to cook with the rice. 

1 tsp paprika a little more if you like the taste of it.  

1 tsp turmeric of little more if you like the taste of it. 

1tsp salt   

1 Tbsp tomatoes paste (optional) 

Methode

Place rice in a strainer and rinse it under cold water, until water come out completely clear.
In a large saucepan sauté the onions with some cooking oil and stir until slightly golden, about 4-5 minutes. Make sure all the ingredients, including the rice and water, are all ready to go!!! Reduce the heat a little and stir in the rice, carrot, cooked lentils, spices, salt and pepper. As well as the tomato paste if using some. Mix and combine well. It all needs to be done briefly as you don’t want the rice to crisp.  Finally pour in the cold water. Mix again.  


Bring it to a boil. Reduce to minimum and cover. I like to add a clean dry cloth before adding the lid. It keeps the moisture into the towel as the rice can cook properly. Cook for 20 minutes, take off the heat, uncover and let it be for 10 min. With a fork or two, gently fluff the rice  until all the grains are separated! You will maybe need to let it sit again for a couple of minutes and finish fluffing it! It’s a delicious dish that can be served as well as a salad. You can serve with any kind of meat or grilled fish. If you are making a veggies meal, that rice will be awesome with grilled vegetables and a nice lemon ish green salad!! Anyway I am sure you will find a purpose !! You’ll have to try it it’s so delicious!!!
