My amazing Chicken tender sweet stew.

If we have some bananas getting aged we do a banana bread right? So if we have some grapes that haven’t been successful we do a sweet chicken and potato recipe. I usually use my grapes to make jam if the grapes are sitting on the counter for a little too much ! But this time it caught my eyes right when I was getting out the chicken tenders from the grocery store! Well, grapes into a stew give a lot of sweetness and some pretty interesting bites as well. It came up to me so I had to try. Chicken tender crisp in the oven is just a genius idea as well . Forget about the mess! And wait until you how beautifully crisp they came out! A recipe that please all my crowd. This little sweetness has please the young ones and has surprised the older. A great dish to serve to your loves ones

Ingrédients

About 2 pound chicken tender/ 1kg

To coat the tenders

1/3 cup flour

3 tbsp cornstarch

1/3 cup bread crumbs

1 tsp salt

1 tsp pepper

1/4 cup olive oil

2 medium red onions

1 tsp crushed garlic

1 tbsp honey

1 tbsp tomato paste

2-3 large potatoes

2 large carrots

1 Serrano (optional)

2 cups seedless grapes

1/3 cup dry raisins

1 cup grape juice.

1 cup cooking white wine

17 oz chicken broth /500ml

Proceed

Take a large roasting pan and pour in the olive oil. Set aside

In a large shallow plate mix in all the coating ingredients. Flour, bread crumbs, salt,pepper,cornstarch. Dip and coat each tender uniformly. Place them straight into the roasting pan. With a kitchen brush, tap slightly each tender facing up with the little bit of the oil of the pan. Crisp them in the oven for 10-15 minutes on broil. Flip them ay half time. They should be completely golden and crispy.

in the meantime prepare the sauce

take the red onions, discard first layers. Cut them in half. The thinly sliced them.

Take your potatoes, peel the skin and cut them in half length wise and then into three, lengthwise as well. It should look like a big fat French fries. Set aside

Peel off the carrot and cut them into big shank. Set aside

Wash the grapes and make sure to take them all apart from the branches. Set aside

Take a medium side cooking pot and drop in couple tbsp of olive oil or cooking oil. When the oil is hot throw in the red onion and let them cook for about 10-15 minutes on medium high, stirring them all the time. Add the crushed garlic and tomato paste. Stir and add the honey. High up the heat just a little, and pour in the wine give it a nice stir and add the grapes juice. Give it a stir as well let it bubble an evaporate for a couple of second. Now add in carrots potatoes dry raisin grapes and stir well to combine all the flavors together. The tender should be all crispy, add them into the pot ,give a nice stir. Season with salt and pepper. This recipe need a lot of pepper. Taste and adjust. Pour the chicken broth and cover just enough to reach a little less than the surface. Let it cook for about 20-30 minutes or until all tender. On a medium heat. Making sure that there is a nice sizzling until the end of the cooking time.

serve it with a nice tomato rice and with a miche of warm bread. The sauce is sweet and a little spicy from the Serrano, it will warm up our winter table for sure.
