Wonderful Meat & chicken coconut curry…

I became a fan of coconut milk. It brings so much taste to our dishes its texture is superb. I tried it for this recipe and if you continue to be interested in my recipes, you will often come across it. It is how much I like my new found . For this recipe I used meat and chicken, you can make it with just one kind. Also, I cook it in a slow cooker if you prefer to cook it with the pot just make sure to well saute the meat before you prepare the sauce.

For 4-5 people

1 pound pot roast or beef shank

1 pound thigh (but it doesn’t matter, just be careful with cooking if you do it in a pot)

1 eggplant

1 onion

5 garlic cloves

4 potatoes

2 Tbsp Marsala

3 Tbsp curry

1 can of coconut milk

For finishing a little

Fresh cilantro

Mango pickle

Dice the eggplant, add a good drizzle of olive oil a nice amount of salt, and put in the oven @ 450F/ 225C for at least 40 minutes. They must be crispy brown with a tender heart.

In a frying pan, pour couple of tbsp of cooking oil and when it reaches a hihh temperature, start on searing the meat. You want it well.golden on each side. Once done set it aside. Do the same with the chicken and set aside.

Peel the potatoes and cut them in half and then into small cubes. Rinse them well and set.them aside.

Prepare your curry sauce . Take your onions, discard the fiest layer and cut this one in half. Tjen slixe oe dice them thinly. Put a side for a moment and get take the garlic. Discard the had skin and crush it.

In a frying pan, fry the onions with a little oil, I love to cook with olive oil. The hit need to start on high and then after 2 minutes reduce it to medium and continu on stirring the onions until slightly brown. Then add the garlic stir for a minute and add your spices and cook them a few seconds before adding the coconut milk. Bring it to sa small boil.

And now start cooking.

In the crockpot olace first the meat and chicken and pour on tje curry sauce. Finish with adding tje potatoes and then the crispy eggplant. Check the level of the liquid. Add some water if necessary. The meat needs to be cover.with sauce. Cover and cook for 4 hours on high mode.

On the stove

Add the meat to the curry sauce. Place in the potatoes and crispy eggplants. Check the liquid , and let it cook 2 hours on medium-low heat. Add a little warm water if necessary. When the meat is almost done, add the chicken. (The smaller your meat cubes will be cut the faster it will cook.) And the chicken need at least 45 minutes of cooking time.

Here to serve I finish with a little fresh coriander and mango pickle! And to go along, I make some jasmine rice.

You can use the sauce as a dip if you have some Naan handy. And Voila !!!
