The best dinner had ever have since long time. Not just because of its tatse but so easy and fun to prepare. Very convenient if you like tp prep thing in advance. You can serve it many different way. It’s light. It’s full of flavor. Let get to the recipe ! Awaiting on your feedbacks for sure!!! 1 1/2 pound chicken thigh (boneless)

For the spices I like to use

1 orange zest

2 tbsp paprika

2 tbsp cumin

2 tbsp shawarma mix spices (Amazon).

½ tbsp garlic powder

Salt & pepper

1 pound small potatoes

2 large onions

1 pack of fake bacon

About 10 skewers

Before you start, put the skewers to soak into a large amount of water. And let it be until you’ll need them. Of course you will need to do so if you are using wood skewers only.

In a big bowl, pour all the spices and whisk them with the olive oil. Place in the chicken and mix well with clean hands. Make sure that each piece of the chicken is coated with the spice mixture. I cut my chicken thighs in half lengthwise. You can do so if you judge that you need it.

You can cover it and let it rest in the fridge for up to 24 hours. I Highly recommend it. 30 minutes minimum. Wash the potatoes very well. And place them in the baking pan along with with some olive oil,  salt, pepper and a little of  fake bacon.  Try to get a large baking pan that can receive a grill on top! Place the grill and build your skewers. Take the onions, discard the first layer and cut the onions into 4-6 pieces. Take the skewers  and start with a piece of chicken, followed by one of onion, and fake bacon. Redo this pattern one time without the fake bacon. The skewer should finish with chicken. Leave space while you are picking in the chicken . You don’t want it to be too tight to each other. Place the skewer on the grill and continue until no more meat. Once done pour the leftover spices mixture into a clean small bowl. Add a few drops of olive oil and some of the spices just 1 tsp of each. Stir and set aside.   Preheat oven at 425  F

Place the baking dish in the oven. Every 15 minutes you will want to flip the skewer ¼ turn and brush a little of the spice mixture on each skewer before continuing on baking. We will do that for about 45 minutes to 1 hour. Depending on the size of the chicken.

To serve: A well toasted pita. Just place the pita on a bed of tomato cucumber salad and add the chicken on top. Place some potatoes and drizzle to top with a little of the sauce. If you have tahini, pour some as well. A sprinkle of fresh cilantro!! And that is it for this recipe! I really do hope you will try it because it is so truly yummy!!

You can serve it as a sandwich! Along with some rice! Awesome with some grilled vegetables or any kind of side you feel Like will go well with these delicious and flavourful chicken skewers!

Ps If you don’t want to use skewers,l just place the chicken on a baking sheet covered with parchment paper. Making sure that each piece lay down properly and flipping just half way. Because The chicken will not be cooked the same way you probably won’t need the same time . Check after 45 minutes if your chicken is tender and ready!
