The stunning chicken & rice casserole!!!

Oh, my how good it was back then! Lol! I’m already old on the networks!!! So, I say, at the time, I made “one pot pasta recipe” pasta with sauce made in a pot!!! You know?! Lately I can’t stop seeing them! The “one pot” Bolognese pasta! The “one pot” of pasta with mushrooms and asparagus! I remember making the salmon one!!! The “one pot” of pasta with fresh salmon! excellent! Brief! Why not cooking some chicken and some rice together and We will name it the “Chicken & Rice Casserole!!!” a little like a paella concept, but with much less preparation! And here it was just surprisingly delicious! a simple recipe that uses just few and simple ingredients. Another little wonder that will delight your taste buds.

Stunning chicken and rice recipe

The ingredients you will need!

2-pound boneless chicken thighs (1kg)

1 Tbsp of paprika + 1 for the rice

1 tbsp of onion powder

1 tbsp of chicken powder

1/2 tsp salt 1/2 tsp of pepper

1/2 tsp of cumin

4 crushed garlic cloves

1 large onion or 2 small

3 fresh tomatoes

1 packet of fresh green beans

3/4 cup rice (jasmine or basmati) (200g)

1 1/2 cup water

Take a small bowl and pour the oil, spices, salt and pepper into it, stir well and set aside. Take a large baking sheet and cover it with aluminum foil and then parchment paper. Take your chicken, wipe it with a paper towel or the way you usually clean it, then place it on the plate, not squeezing them together. Retrieve your small spice bowl and using a kitchen brush, brush each piece of chicken. Flip them over and brush the other side. Turn on your oven at 425F 220°C. Place your chicken and let it cook for at least 25 minutes, turning it halfway through cooking.

Now that all your ingredients are ready, start cooking. Take your cooking pot and pour a few drops of cooking oil into it. When hot, add your onions and start browning them over medium heat, stirring for 3-4 minutes. So that they get a nice golden color. Then add the garlic stir, then add the tomatoes, the green beans, the salt then the pepper and a little paprika if you wish. Stir everything well, then pour the rice and stir again so that all the rice is well coated with all these ingredients. Add the chicken pieces and above all do not forget the winter. That’s all the juice from the griddle Turn up the heat. Pour the amount of water, bring to the boil then in an oven preheat to350F 180C, cook your rice covered, for about 30 minutes or until all the water is completely absorbed then remove from the oven, remove the lid and let sit for 10 minutes. After 10 minutes remove the chicken and with a fork separate the rice grains here it is ready to serve. Take a dish, arrange the rice and its vegetables as well as a piece of chicken on top.

For fun, I made a little mixture of extra eyelashes with fresh chili and shallots, which I stirred with a tiny bit of olive oil and lemon and sprinkled the dishes with it.
