It’s not just a banana cake!! The batter by itself is just decadent. And then yes the bananas give a marvelous taste. I tried it with cinnamon and also with rum. I found that kids better like it with this little touch of cinnamon!!! I definitely love that old fashion taste of the rum combine with the bananas, it is just a explosion of flavors. Then comes the crunchy bites of the walnuts!!! I wouldn’t change it with another kind of nuts!! I wouldn’t think for a second that this little cake would be please sp much from my crowd. “C’est partit!”

Ingredients
4 ounces melting butter. 120g
1/2 cup sugar 120g
2 large eggs
1 cup flour 120g
1 teaspoon baking powder
2 tbsp. Rum, or cinnamon.
1/4 cup chopped walnut. 60g
1/4 cup chocolate chip 60g
2 rip bananas
Proceed
Grease and flour an 8×5 (20×12) loaf pan and set aside.
Turn on oven at 350°F 180″C
Take the two bananas peel off the skin, placed them on the plate, mash them with a fork and set it aside. In your mixing bowl whisk together the melting butter with the sugar, and the rum. Add then the eggs one by one. Whisk and add the flour and baking powder. Whisk just to combine. Add the mash bananas with the chopped walnuts. I like to chop mine by myself to leave kind of big chunk of nuts and the chocolate, if using. Whisk again just to combine and pour the batter into the prepared pan.
Take a very thin slice of butter and insert it in the middle of cake length wise. You’ll see it will make a beautiful opening in the middle of the cake. You can add as well, one banana that you slice the way you want just to decorate the top of your cake in this case, just dust each banana with a little flour before adding it on the cake. In the oven, it goes for 50 to 60 minutes or until center of the cake is dry. Let it cool down on the grill for 10 minutes. Enfold it from the baking pan. Place it on a serving in plate. Dust a little powder sugar and enjoy!!!
