What a great idea! This marinate is just perfect for the poultry. Tangy and so fresh from all those herbs! Brush your chicken with it for a barbecue party! You will for sure please your crowds! Marinate it to then roast it in the oven. Serve it with a nice mashed potatoes, and you will have just a scrumptious hearty meal! And I am happy to share it you as always! Ingredients 6-7 servings
2 pounds of chicken.
I used exactly 7 pieces of legs and thighs and served 1 legs and thighs per serving!but take what you like except “breast” as it will be a whole new way to prepare and cook!
1 bunch parsley, washed
2 tablespoons fresh oregano
2 tablespoons of thyme (lemon thyme I loved)
4-5 tablespoons of olive oil
4-5 garlic cloves
½ lemon juice
Salt pepper
Dry all the chicken pieces and place them in a large bowl. In your blender, mix all the other ingredients and pour them over the chickens. Cover and place in the refrigerator to marinate for at least 1 hour or overnight. Now here is the good thing about this recipe!!! You can either barbecue it or roast it in the oven. Both ways will be just delicious
In the oven. Simply place the chicken in a baking dish. Keep the rest of the marinade aside.
Put it in the oven at
Chicken thighs at 350°F – 50-55 minutes
Chicken thighs at 375°F-191C – 45-50 minutes
Chicken thighs at 400°F -204C – 40-45 minutes
Chicken thighs at 425°F 218C– 35-40 minutes
The chicken must reach 165F 80C 10 minutes before the end of cooking, pour in the rest of the marinade and continue cooking for the last 10 minutes. Delicious !!! Just perfect for summer!!!
If you decide to make it on the barbecue! Just use this marinate to brush the chicken along, while it is on the grill.
