There are so many recipes in my files that I can only share them once before moving on to the next. While arranging some old files and videos, I came across this scrumptious salad I remembered making at the end of winter when spring had just started. It’s a boost of flavors! The delicious combination of salami and broccoli will surprise your taste buds. It’s just so flavorful! The vinaigrette is very “French” with the Dijon mustard that makes me feel transported to France! If America is known for ketchup, France is known for its mustard! It reminds me of the beautiful countryside of France. Tonight, I want to give it another try, this time in the summertime, with some crackers and a glass of wine. Allez! Let’s get to the recipe! Ingredients
For 4 persons.
2 large heads of broccoli wash and cut into small florets.
1 shallot. Thinly sliced
3 tbsp mustard
1 tablespoon mayonnaise
3 tbsp vinegar
4 tbsp olive oil
4 tbsp neutral oil
1/5 cup 100 g dry salami.
A small handful of dried fruits (papaya apricot, figs, dates, etc.) cut into the bite side.
A small handful of nuts (pecans, walnuts, cashews, slivered almonds, etc.)
Take your broccoli, pass them in the vinegar, and rinse them with water. Cut them into small florets, then rinse them again with plenty of water. Set aside. In your salad bowl, whisk together the mustard, mayonnaise, or crème fraîche and vinegar. Add salt, pepper, and shallot. Mix until thick paste. Then finish whipping it up with the two oils. You can add a drop of water to it if it seems too thick or too rich.
Toss in the broccoli, add the salami, the nuts, and dried fruit into it, toss it well Et voilà!
