A scrumptious chicken and vegetable thaï soup!.

A Little Free Library is a “take a book, share a book” free book exchange. They come in many shapes and sizes, but the most common version is a small wooden box of books. Anyone may take a book or bring a book to share. I love to have a walk early morning on Sunday with my kids!!! They are looking forward to those littles boxes!! Not everyone come back home with one book, sometimes just one of us will find something interesting, but this is what is making the walk entertaining and fun! And For me, a French lady from Paris ,it is very unusual to see such little boxes sitting at the entrance of an house and accessible to the pedestrian. So convenient and adorable!!! This time it was my turn to find my little treasure! A Thai book recipes! At first that is my daughter who found it! And just when she opened it she got to that recipe that i am about to share! I though it was a little adventurous to prepare a soup while it is 100 F 40C , outside! What a great idea we had!!! So fresh by all those vegetables and the fresh cilantro that comes at the end!!! Let me say, it is just an amazing soup and even by this heat we just had a great moment of flavors! Wow so much flavors!!! I am very not of coconut milk or cream person. I just did not grew up with those ingredients! But since the kids grow up and watch their “tick tock” and “you tube” reels, they come up with so much of worldwide culinary ideas, lol! I had to change few things in my pantry !! Lol! Coconut milk can is one of the thing i added! And since i am getting use to add to some poultry or meat dish without bringing too much of the coconut taste but more of a texture! I mean it is easy to balance the taste.You can add just a can instead of two and substitute the second one with water or veggies broth if you are hesitated on this kind of flavor. The noodles bring this final touch that made the little ones come to it and enjoy the veggies and the chicken along it!!! A great meal full of unusual flavors!!! i am sure i will make it again befor this end of the summer and looking already fowardfor it for during the winter!! This is my delicious Thai soup recipe !

Ingredients for 6-8 person

6-8 boneless chicken thighs. Or breast. Just make sure you check the cooking time!

4 cloves Garlic slices thinly.

2 tbsp fresh Ginger chopped finely.

2 tbsp Red curry paste . A little more if you like.

4 tbsp Worcestershire parve.

4 tbsp Soy sauce.

2 tbsp sesame oil.

1 can Coconut milk + 2 of water.

Handful green bean

1 large zucchini

2 Carrot.

1 pack Thai Noodles.

Fresh cilantro and sprout for garnish.

Prepare the chicken.

Preheat the oven at 425° Fahrenheit 220°C. Take some cooking oil and grease a large baking dish, along with salt and pepper. Then set aside. Take your chicken thighs and cut them into strips. Placed them in the prepared baking pan and cook for about 35-to 40 minutes. Or until, it’s cooked and crispy on the edges. You can definitely prepare that in the pan instead with some oil. But anyway, once done set aside.

Prepare the broth. Take a large soup pot, drop couple tablespoons of olive oil, and on and medium, low heat, start searing the garlic and ginger. Just few second. Add then the red carry paste. Mix briefly and add the vegetable. Mix again to really coat all the vegetables with the red curry paste. Stir in the Worcestershire, soy sauce and sesame oil. Mix well to combine and add the chicken. When everything is well combined add the liquids and once it is starting to boil add the noodles. Cook until noodle are soft. It should take just 3-4 minutes. When it is time to serve, arrange the noodle on a serving bowl, pour the delicate and fragrance broth and garnish with some sprout and fresh cilantro! Voila this is just how she wrote! I link the book just for fun! Anyway it has many ice recipes and for the red curry paste, you can find some noice brands on amazon or in your grocery store on the international department! And then for the noodle it is the fine one that we like to use. But the one that you usually cook with will perfectly work. And you! I wait for you to give me your comments and feedbacks!
