It is that time of the year where it is so cold that only warm food will satisfy ourselves . but who says warm food says that it needs to be cut and chop and slice and all that prep makes us just eating everything and nothing. And so I don’t know about you but me personally I tend to gain a bit of weight for that time of the year. aren’t you ? I really had to think of something that I will make without spending all day in the kitchen but will taste like it. So here it is a delicious warm salad that you can top with any protein of your choice and any veggies that you’d like. As long as you put the dressing that I will share with you now any veggies will work
For 4-6 peoples
1 Red cabbage
1 white cabbage
2 carrot
2 zucchini
2 Endives
10 Brussel sprout
1/3 cup slivered almond
1/3 cup pure tahini
1/4 cup sweet and sour chile
3 tbsp olive oil
Roughly cut all vegetables really don’t buzzer to make it a nice cut ‘ Put them in a large oven tray cover with parchment paper. In a bowl whisk together the tahini,( at this point it needs to be the pure tahini from the box. olive oil chile sauce, salt and pepper. Pour it onto this beautiful garden of vegetables toss it well as all the veggies get some dressing and shovel it into a 450F oven
After 30 give it a nice mix and put it back until carrot tender !!! I made some tahini sauce to toss that. here is the recipe if you’d like. But a nice vinegarette will do as well. If you want to top it with chicken or steak or tofu … go for it
