Vegetarian lasagna

With all the pasta I make during the week, the idea of ​​making lasagna never came to me … Well, that’s unfortunate because this little dish is more than comforting and just a real delight. You can garnish them with whatever you like I remember Jamie Oliver making lasagna with peas and asparagus which just looked incredibly good. But this recipe that I am going to share with you I owe it to Stepharari on Instagram. Her little demo really makes me want to try this flavorful recipe. So this is it …

For 4-6 people. I made a little recipe because I didn’t know if everyone was going to like it. When I say 4-6 it’s obviously 4 big chunks or 6 small chunks.

1 Large Eggplant

2 Zucchini

5-7 Tomatoes (you can use the tomatoes of your choice)

For the tomato sauce (I recommend you make it delicious)

1 onion

4 Garlic cloves

one large and one small canned crushed tomato

1 small can concentrated tomato

Some thyme and basil leaf

Salt pepper

Olive oil

400 g Fresh mozzarella

A handful of grated mozzarella

1 pack of lasagna

Cut the zucchini, tomato, and eggplant into fairly large rounds, this greatly reduces during cooking. Place them on a baking sheet (with rim because the oil flows) Soak them in a generous drizzle of olive oil on both sides of the vegetables, coarse salt, and place in the oven at 400 F for about 30 minutes or until the color is golden.

In the meantime prepare your tomato sauce. Brown the onion and garlic well. Add the crushed tomatoes and concentrate the herbs and simmer for at least 40 minutes.

Mounting :

In a baking dish, put the raw lasagna first (cut it if necessary) and pour in a nice layer of tomato sauce, add the eggplant and then a new layer of lasagna with the tomato sauce then the layer of grilled tomato with this times a first layer of mozzarella slice. A third layer of lasagna with the tomato sauce then the zucchini and a last layer of lasagna with the sauce then the mozzarella a little basil of the salt a pinch of pepper. Bake 45 minutes to 1 hour at 190 C. Check the cooking by spades with the tip of a knife. Not all lasagna are the same and it also depends on the amount of ingredients. 5 minutes before serving sprinkle with a little grated mozzarella and bake 3-4 minutes in gratin mode.
