Rice with concentrated tomato and onions!
I love this recipe! it is effective and very easy! It brings a little extra to the rice when you want to add color to it!! With a very nice taste.
You will need!
1 onion minced.
2 cup of rice (basmati or jasmine)
1 tablespoon of concentrated tomato
Salt & pepper to your taste.
3 cup of water (the same glass you used to measure the rice).
Peel the first layer of the onion then rinse it, cut it in half then slice it finely. In a medium sized pan, pour a small amount of olive or other oil, (like canola or peanut) and begin to sauté your onions over medium heat until lightly golden in color. In the meantime, rinse the rice in a colander until the water comes out completely clear then when the onions are ready pour in the rice with the concentrated tomato salt and pepper stir well over medium heat for at least 1 minute! Then pour the water and bring to a boil. Lower the heat to a minimum, cover immediately and cook for 20 minutes.
Immediately after 20 minutes of cooking, remove from heat, uncover but do not touch for 10 minutes.
Then using a fork separate the grains of each other and voila! It’s ready to serve!!
