An easy and yet scrumptious Tomato pie!!

The fancy way to prepare a tart in france will be I truly think, the quiche ! A dough is prepared and then a creamy sauce is poured on top with all kinds of different garnishes! The quiches has been around for years and until today thousand of quiches are prepared every week by our sweet moms! But this time no cream is involved, and the base is simply a puff pastry! The puffy crunch along with the juice from the tomato and the little hit of the mustard is truly amazing! So, Leave the quiche for another day, and let’s make it today, as easy as 1-2-3 ! C’est partie !!

Delicious and easy Tomato pie

The ingredients you’ll need:

1 roll of puff pastry

4-5 firm tomatoes

1 red onion

2 tablespoon Dijon mustard (Maille is just the best for it !)

1 teaspoon paprika

Salt and pepper to your taste.

Olive oil

The fresh herbs you love!! Coriander! Rosemary! Oregano (what I used for my part) thyme! Curly parsley. In short what you like but put in!!!

The method

In a small bowl mix together the mustard, salt, pepper and paprika with a teaspoon of olive oil.

Take your tomatoes, wash them, cut them in half and then in thin slices.

Take your baking dish. Place the puff pastry and roll it out, leaving the edges sticking out. Using a fork, prick all over the dough. Then bake it for 5 minutes at 230 C/ 450F Remove from the oven. Spread the mustard sauce, add the tomatoes, overlapping them slightly. Then bake at 450 F/ 230 C for 20 minutes then take the pie and remove all the juice from the tomatoes! Operation is a bit tricky but just because it’s very hot. Cover with foil and continue cooking for another 20 minutes. Once finished sprinkle with red onions a little olive oil, salt and pepper!! And fresh herbs! If you want a milk meal. Sprinkle the party! Or even better, drop small goat droppings here and 3-4 minutes before the end of cooking in grid mode Ohlala it makes me want to bake another one already. And now that I am writing come another amazing idea!!! Sprinkle some tuna in oil and fresh black pepper. Omg next time, that is what I am going to do! Lol!
