Spinach and cheese pie!

Spinach and cheese borek

I discovered this little recipe, very prepared here in the USA, on Instagram! An Israeli woman who apparently likes to work with lots of different kinds of dough!!! She is just amazing! This one really tempted me! Very original filo pastry! It’s crispy, and light! This stuffing is deliciously tasty! Accompanied by a salad and it will be just the perfect dinner for a weeknight! Have fun closing the Boreks either simply depositing philosophy sheets then stuffing and so on, ending with the philosophy sheets! Either by stuffing the sheets with the stuffing then roll them into large sausages, then place them in a round baking dish. Following the shape of the dish. Which will form a big spiral! It is very important to oil each leaf well before working on them! You can use butter, margarine or oil, cooking oil, grapeseed oil or peanut oil. I put you pictures from my spiral one! And you can always go to my social networks to find a little demonstrative video!!! Come on, let’s go for the recipe!!!

Ingredients

6-7 philo sheet ( don’t forget to brush each one before adding another sheet. )

1/2 cup oil or butter to brush the sheet’s

A pound of fresh spinach (500g)

1 cup feta cheese (200-250g)

1 cup sour cream (240g)

1/2 cup heavy cream (120g)

1 tsp salt and 1 pepper

1/4 tsp nutmeg

1 egg

You can either grease two sheets, fill with cheese mixture, and then roll it like a big long tube. Then you place it into you baking pan and follow the shape of it. Continue on until the all baking pan is full. Or you can place two sheets straight into your baking, grease them, fill the surface with some of the cheese mixture, and then repeat until no more mixture. Finish with a layer of philo drought and grease it as well. You can play around by enforcing the pick of your knife to create some cube. Again Grease with the brush  and bake for 40-50 minutes at 350F 180C. Very creamy and cheesy! With a nice green salad it would be the perfect balance to this delicious Borek !
