SUFGANIOT

The magic of these little donuts that everybody loves to bake even when we are not fan being in the kitchen. The magic while frying this little circle pupping up and form by itself this amazing perfect ball. So light and so yummy even only dip with sugar.

Ingredients

1.7-pound flour

1.5 oz sugar

1 tbsp vanilla extract

1 tbsp dry yeast

5 oz warm water

5 oz warm milk

2.1 oz oil

2 eggs

Proceed

Prepare the yeast combined with the hot water, give it a quick stir and let it sit while preparing the rest of the ingredients. In the stand mixer with the hook attachment mix together the flour and sugar add then the water mix the milk and vanilla combine all well and add the eggs. When the dough is ready put to proof 1 hours cover in an oily bowl

Prepare a kitchen tray cover with parchment paper and spread oil all over the paper

After 1 hour the dough should have doubled its size. Knead to 3/4 inch thick and with a cookie cutter or a glass cup cut circle of 3-inch diameter. You can reroll scraps only once. Cover and let it rise for 30- 60 minutes.

in a large saucepan put oil and let it reach 350 F before dropping the sufganiyot. You will see them rise give it a few seconds and flip it over. It should be golden brown

Sufganiyot are usually filled with strawberry, apricot, figs jam any jam or chocolate spread or just sprinkle with sugar will do. Also unlike the doughnuts sufganiyot is really something that you need to do the same day as you need it. Unfortunatunatly it is not possible to make them in advance.
