Oh my oh my … What beautiful found I made this time again… The perfect way to serve a light meal, with sliced avocado and well-dressed salad. You keep the leftover in the fridge and cut some slice to warm in the oven drizzle some olive oil on it with some sliced tomato IT IS HEAVEN !!!! I swear.
Ingredients for 1 loaf
3/4 cup warm milk 100ml.g
1 pack active dry yeast
5/8 cup Melted butter 70g
1 1/4 cup flour 300g
1 Egg
1 tsp Salt
THE FILLING
8 oz / 1 pack Soft cream cheese 230g
1 Pack smoked salmon ( a small one will do!)
Optional
Bagel seasoning ( Believe me it brings it to an all new level)
2 Tbsp Poppy seed
2 Tbsp Black & white sesame
1 Tbsp Garlic powder
1 Tbsp Dry dehydrated onion
3 Tbsp Pumpkin seed mix with sunflower seed
THE WASH
1 Egg yolk
2 Tsp Heavy cream
PROCEED
In the bowl of the stand mixer with the hook attachment, flour, dry yeast, egg, butter, milk and finish with the salt. Once all good mix it is very important to let it knead for at least 10 minutes. Lightly grease a bowl and put the dough to rise 1 to 1 1/2 hour, cover with a kitchen towel if possible in a warm place.
Prepare the seasoning by mixing all the ingredients together. Make sure to put your cream out as you really want to spread it onto the babka dough easily.
When the dough has fully rise work it on a slight flour work table. Spread it down into a rectangular shape of about 9″x16″ / 22×40
Spread down first the cream cheese to an even amount all over the dough. Add the 3/4 of the seasoning (will use the rest at the end ) Roughly slice the salmon and spread it all over.
Lenght wise roll the dough, making sure that you are rolling it very tightly every time you create one closure.
Cut the dough into 2 equal loaves and cut each loaf into half again lengthwise but not until this end. It is like you are open it but leaving the end together.
Braid it by twisting the two loaf together. If you have a silicon loaf pan so just put it directly inside. If not well grease you pan before putting the babka into it. Let it rise for a small hour cover with a kitchen towel. At this moment you will want to put your oven on at 350 F.
Mix together the egg yolk with the heavy cream. Gently brush the babka with and sprinkle with the rest of the seasoning.
Shovel it for about 25-40 minutes . It should be well golden all around .
When Babka fully cooked gently tale it out from the loaf pan and let it completely cool down before slicing it, Yes we will have to wait a little longer before tasting this scrumptious creature.
Serve it with some sliced tomato and avocado drizzled with a dash of olive oil and a drizzle of lemon. It is just amazing believe me.
To store it is in the fridge for up to 3 days. Put your oven on cut some slice and warm it up.
