Shortbread hamentashen!!!!

We are so, all of us existing of this holidays!!! Little ones getting existing to dress up the characters they always wanted to be!!! Temples are full of joys!!! And mommies are having fun in the kitchen working around Funfetti and Chocolate chips!!! Poppy seed and orange juice are bubbling in the saucepans!!!! The chocolate spread box is a little bigger at this period of the year! Lol! And assorted jams are right on the counter!! All that remains is to make the dough!!!! Alors! “C’est partit !!”

Ingredients
1 ½ stick of butter (170g)
¾ cup confectioners sugar (75g)
½ tsp vanilla extract ( I really do use only powder now )
½ tsp cinnamon
1 large egg yolk
1 ½ cup of flour (214g)
A pinch of salt
You can make it with the kitchen hand mixer or like me by hand. It’s a very easy dough to work with. In the mixing bowl (the one you decide to use) cream the butter with a wooden spoon first then add the sugar and bit with the paddle attachment for a real 2 minutes. Add the vanilla cinnamon and also the egg yolk and continue on beating until well combined. Now switch to a wooden spoon or use your hand. Add then the flour and salt and mix until just uniform. Cut them in half and add the funfetti in one half. Wrap the two halves and let it sit 2 hours or overnight in the fridge
For the brownie filling.

⅔ cup sugar (135g)
5tbsp butter (75g)
½ cup cocoa powder (100g)
A pinch salt
1 large egg
½ cup flour (65g)
½ tsp vanilla
1 egg for the egg wash +1 tsp milk or water
1/2 cup melted chocolate (100g)
In a double broiler or in a microwave safe bowl, mix together the sugar, butter, cacao,and salt. Start heating up and stir until all melted and combined. Set to a bowl and stir in the egg and vanilla. Fold the flour in. Combined and set aside. The dough is ready, take it off the fridge. And let it come to a more workable temperature. Prepare your egg wash with milk and set it aside. Roll dough out to ¼ inch thick and with a round cookie cutter (2 inch) (5cm) , form your circle. You can easily rework the scraps of dough until no more left.

Brush each circle with egg wash. Fill the circles with 1 teaspoon of brownie batter. Fold the two sides of each circle together, overlapping them at the bottom, then fold the top down to create a triangle. Place the hamantaschen on a baking sheet lined with parchment paper. Don’t place them to close to each other! Sprinkle with icing sugar and bake for 10 to 12 minutes or until lightly golden. For the hamentashen brownies, right out of the oven insert a chocolate chip on each brownie. Sprinkle some icing sugar on each of them!!! Let them rest for 5 minutes on a wire rack. You can melt a little chocolate in a bowl and then lightly drizzle each of them with a little of it! A few chocolate chips and voila! !!! You can use the recipe for the dough, it is excellent, then fill them as you see fit. As in the photo below, I had fun taking half the dough and inserting about 1/2 cup of funfetti! It’s cute and the kids love it! Just knead the funfetti into the dough before letting it rest! Then again the fills are endless! If your hamentashen open during cooking, don’t panic but just act quickly when they come out of the oven by re-closing them carefully and then letting them cool as indicated in the recipe! There, all is said! I await your feedback!
