Salmon fish soup

It will definitely will be as delicious as it is now, if you use other fish like cod, sea bass, branzino, red mullet, ect.. ect.. it’s quite a soup let me tell you!!! We love salmon!!! So I always try to find a new way to prepare it! It’s raining! Heaters are on, scarf around our necks, it’s pouring out there in the valley of Los Angeles! What’s better than to have a real homemade flavorful fish soup!!! I don’t know if it’s the soup that I like the most or all those little toppings that we had just add before serving?! But this recipe is just outstanding ! stunning!!! Let’s get to it!!!

Ingredients
1 large onion or 2 Thinly chopped
Few stick of celery (take the one from the center) cut in big chunks
1 large carrot cut in big chunks
Few small yellow potatoes peel and cut in half
Tomatoes paste (optional)
⅓ cup white wine
2 tbsp flour
3-4 cup of broth or water
1 pound fish filet! I used salmon but any white fish will do! Also feel free to change the vegetables! You can use chards, and leeks, you can choose turnips and add some zucchini! Celery roots will give an awesome flavor! Please yourself! You can do it on that one!
Some:
Paprika
Cayenne
Turmeric
Salt & pepper
Some thyme
In a medium size pot, pour olive and oil and start sauté all the washed peeled and cut vegetables! Let them sweat! If you want to use tomato paste add it now! Once the veggies have a slightly golden color, Add the flour. Well incorporated, pour in the wine, let it evaporate, add salt pepper, and a pinch of each spice! Bring to a boil and cook it on medium heat until the veggies are almost tender! Take the fish and clean it if needed. Slice it into 1 ½ inch thick slices. In a small saucepan drop some good quality oil and bring it to a nice heat. Skin down first, sear the fish. 3 min on each side. Season it as well with the spices. Just a dash on each filet. Let your fish have a nice golden color all around. Once all seared, add them to the soup without breaking them apart too much! Use 2 tbsp of the oil from the fish and pour it into the soup broth. Bring it to a boil. Serve it with some rice! ( I made a delicious coconut rice that came out just perfect for that recipe!) and have fun putting some topping to your soup if you feel so, like some microgreens, fresh cilantro, and a nice spoon of sour cream. But don’t forget the lemon zest with a drizzle of olive oil and a nice fresh grounded black pepper
