Potato Frittata

This is the small dish I make the most lately. The children are at home all day, they are hungry all the time. I find this recipe awesome in fact you can put what goes through your head, what you no longer wanted in the fridge, carrot, zucchini, broccoli, leftover meat that you cut into small pieces. WHAT MAKES YOU PLEASED.

For 5-6 peoples:

1 large onion

1 large Zucchini

8 Potato

50 ml cooking oil (peanut, sunflower, ECT grape seed, etc.)

7 eggs

Salt pepper

Proceed:

If you decide to add other ingredients, then remove 1 potato each time you add new ingredients. And so it will become a “Vegetable Cake” with or without meat. But for the moment in a large pan with a large amount of oil (this is very important. This gives the potatoes the possibility of cooking at the same time of browning.) Cut the onion into small slices and make them golden. Cut the potatoes and brown them until they are golden brown but soft inside. Then add the zucchini as well and then salted, pepper. You will always have to stir here and there. When everything is well cooked, golden brown , pass everything through a colander. (Maybe you will not need to throw the oil and to transfer it in a small jar until next use). In a large ovenproof dish, break the eggs seasoned with Sal & pepper. Bake at 350 F for 35 to 45 minutes. Then I also like to put 3-4 minutes in broiling mode. It gives a little “crunch”

Here is a small easy recipe that keeps well in Frigidaire for a few days. Even so, I think strongly that will none of it will remain after the first service!!!
