It’s the season and I have the perfect recipe to please your guest. Even though I am not a sweet lover when it comes to this tart I can’t stop cutting another slice. It is how delectable it is. The dough is from a French pastry chef Christophe Michalak. You should check him out it is just insane what he can create. The filling is my little touch from here and there as I like, when I can, put the thing to my own likes. I use a rectangular baking pan but a 9″inch round pan will make it gorgeously.
Allez let’s get into it.
Ingredients
For the dough
1and 2/3 cup Flour
1 cup Icing sugar
1/3 cup Almond powder
3 Tbsp Cornstarch
1/2 cup soft butter
1 Egg
I like to make my dough by hand, but if you do use the stand mixer you will need the paddle attachment Combine all dry ingredients well and add the soft butter mix well add the egg and mix until everything is well combine. The dough will be soft and sticky but it is fine. Form a ball wrap it in plastic wrap and allow it to cool down 15 minutes in the freezer. By the way, this dough stays months in the freezer if you want to get some in advance.
For the filling
3 eggs
1/2 cup light brown sugar
1/2 cup sugar
3 Tbsp melted butter
2 Tbsp corn syrup or honey or maple
1 Tbsp cornstarch
1/2 Tsp vanilla extract
1 Cup whole pecan
In a bowl mix together eggs, both sugar, add the butter syrup combine and add the vanilla as well as the cornstarch and set aside.
Mounting
Pull the dough from the freezer knead just a bit with flour and spread it finely to the shape of your pan. Put on the baking pan pour the filling.
Put a small amount of flour on your hand and flour the pecan with. This step is just if you want the pecan to stay on top of the tart place them on the top of the filling gently. If you don’t want the pecan to show so put the pecan first and then pour the filling.
Shovel for 40 to 45 min at 356 F.
I like to put a little touch of shine. Just even amount of apricot jam and honey 30 seconds in the microwave. Brush the tart with it. It gives it a scrumptious final touch.
Voila here you have. A Pecan tart to remember.
Keep it well sealed with foil paper.
