Osso Bucco

What a decadent dish!!! It’s funny because each amd every time that my mom come to visit us from France she make us this beautiful meme and I don’t know for what reason I never get to tatse it . And every time I used to say “its unbelievable that I never succed to taste this dish!” The aromat that it give to the entire house is insane the tenderness of the meat as well . It was a must for me to try it this time and share it with you. So here is my recipe.

For 6 people

6 veal osso bucco

1/3 cup flour

1-2 onion

3 branch celery

2 carrot

2 tbsp tomato paste

2 cup broth (I used veggie)

1 cup dry white wine

And for serving some tagliatelle.

On a large saucepan put some olive oil to heat up. We want to coat all the Osso Bucco one by one with flour and tap just a little to take off the excess. Put them to sautee until well well golden it should take 7 minutes on each side. Put it aside on a plate for later and scrap down all the meat residue from the pan but don’t disregard it we need just leave it inside it. Cut onion very small dice let it sautee as well add celery cut in a thin slice as well as the carrot cut in very small bite-size. Let all that become well fondant. Deglaze all with the wine and let it on medium heat until all the liquid dissolves. We should not have any liquid on the pan anymore. It should take 5-7 minutes mixing it once in a while. Add tomato paste salt and pepper and broth .Give it a good stir then add the meat along with thyme and few bay leaves. It shouldn’t have a lot of liquid but enough for the meat to cook for a few hours. The sauce is supposed to be thick and well structure. Bring it to a quick boil cover reduce heat to low and let it cook for at least 2 hours or until meat tender. Add some liquid if necessary during the cooking.

If you decide to cook in the oven just prepare it all the same cover and put it on a 350 F oven for 1:30 hour then turn all the Osso Bucco and return to cook for another 1 hour.

Many ways to serve this delightful meat such as polenta or a nice creamy mashed potato or like me fettuccini.
