Olive oil and citrus cake! A flavorful recipe.

It is so amazing when you find a cake that really please you! Lactose free recipe! A bit hesitant about baking with mostly olive oil! It is so unusual, for ma at least, but surprisingly so yummy and full of flavor! Fluffy like a cake suppose to be! Those little bites from the tostaed almond, are so exquisite! It is truly a little wonder! Use an olive oil that you like. I found Kroger brand perfect for me. It is a very nice recipe that I am making very often since the first time I made it! We can play around the citrus we prefer and top it with any nuts that will please your crowd. “Allez c’est partit!”

Ingredients

¾ cup plus 1 tbsp extra virgin olive oil. 190 ml

¾ cup sliced almonds. 110 g

⅓ cup plus ¾ cup sugar. 70g + 150g

1 ½ cup all purpose flour. 190 g

2 tsp baking powder.

½ tsp kosher salt.

4 large eggs.

2 tsp finely grated clementine zest about 2 clementine

¼ cup clementine juice about 2 of them 60 ml

Preheat your oven at 350C. 180 C

Coat a 9” inch cake pan with olive oil and parchment paper. 22cm

In a small bowl toss the almond along with the ⅓ cup of sugar (70g) and 1 tbsp of olive. Set aside.

In a medium bowl whisk together the flour and baking powder with the salt and set aside.

In a large bowl beat the eggs and the remaining ¾ (150g) cup of sugar using an electric mixer on high speed until fluffy and double the volume. About 4-5 minutes. With the mixer running, gradually add the olive oil. Reduce the mixer speed to low and beat in the clementine zest and juice. Gradually add the flour mixture, beating until just incorporated. Pour the batter into the prepared pan. Sprinkle the almond sugar mixture all over the top. Bake for 40-45 minutes or until golden brown and toothpick inserted in the center come out dry. Let it cool down on the rack completely before placing it on a serving plate. I haven’t tried it yet but lemon or orange as the citrus instead of the clementine will work perfectly fine.
