Mustard meat roast!

4 pound of beef roast. For the choice of meat. You can use, Beef shoulder & chuck roast! They are for me the most popular when it comes to roast. And if you need a more festive and luxurious meat then take the flat ribs or short ribs. But it doesn’t serve as many people. So Shoulder or chuck are the two cuts you want to choose from. For the spread that will be used to cover the meat. 1 tablespoon paprika. A pinch of cinnamon. 1/2 teaspoon garlic powder. 1/2 teaspoon mustard powder. 1/4 teaspoon of chicken to consume 1/2 teaspoon white pepper. 1/4 teaspoon coffee powder. 4-5 garlic cloves. 1 1/2 tbsp mustard (I found the Maille brand perfectly tangy for this recipe) 2 tablespoons olive oil. 1/2 cup of water. 2 cups of chicken broth. 2 large onions. For the end of cooking If your sauce is too liquid, 10-20 minutes before the end of cooking, mix together. 1 Tbsp of cornstarch. 2 Tbsp of water. Pour it into the sauce and finish the cooking. You’ll see the sauce will thicken. Or maybe you wont need it!!

Method In the 1-2-3, mix all the ingredients for the dough and mix well. It looks like a thick paste. If you need a little more olive oil, feel free to take 1/2 tbsp at a time. In a large skillet with a little cooking oil, heat the oil until very hot then begin to sear the meat 4-6 minutes on each side. you want it nicely browned on each side. Then place it on a large cutting board and with gloves, cover all the meat with the dough you have prepared before. Then place it in the slow cooker or in the ovenproof pot. In the same pan that you used to brown the meat, pour a little more cooking oil then start to melt your onions that you will have previously thinly sliced.Start on high heat then after a few minutes reduce and let simmer for at least 5-7 minutes, stirring frequently so as not to color them too much, but rather caramelize them. Once its done pour in the liquid and bring it to a strong boil scraping down the bottom of the pot. Pour it all around the meat. If you’re making it in the slow cooker, cover and cook it on low for 6 to 8 hours. I like to cover my crockpot with a thick clean towel. Check the roast at midtime maybe also flip it. the meat will be ready and melting without a doubt after the 6 hours of cooking.

If you do it in the oven, preheat your oven to 450 F and when its time to start on cooking the meat,reduce your oven at 215 F and start cooking your roast for 3 hours uncover. Pull the meat out and gently turn the meat over, cover the dish with aluminum foil and continue to cook for 1 to 1h30. Until perfectly tender To serve, remove the meat from the baking dish (it is good to let the meat rest for half an hour before uncovering it and serving it.) Place in its serving dish and using two large forks, shred it. It should be super tender. Pour some of the sauce on top and around the roast and the rest into a serving bowl. The side dish can be ! Green salad, some roasted vegetables dressed with a tanguy mistreat vinaigrette , sautéed potatoes with parsley & garlic. Mashed potatoes too! In short, it’s up to you.
