Growing up in France, Madeline’s were a staple in my home. We ate them with coffee in the morning, tea in the afternoon or after dinner when we had a sweet tooth. When i arrived to Los Angeles, I was pleasantly surprised to find Madeline’s in stores like Starbucks and major supermarkets. It didn’t feel right for me, a frenchy lady, to buy such a French product from America so I decided to make it myself.

Ingredients:
2.5 Tablespoons of Whole Milk
7 Tablespoons of Sugar
1 Tablespoon of Vanilla Sugar
1 Lemon Zest
1 Lime Zest
1 Cup of flour
1 teaspoon of baking powder
9.5 Tablespoons of butter
2 Eggs
For The Icing:
1 Cup of powdered sugar
1 large lemon (juiced)
3 teaspoon olive oil
Lets Get started!
- Preheat your oven to 392F
- In a medium sized mixing bowl, whisk the eggs with the lemon and lime zest
- Add whole milk to the mixture and whisk thoroughly
- After the milk is added, pour the sugar and vanilla sugar and stir
- Next, add the softened butter to the mixture and whisk
- Slowly add the baking powder and flour to the bowl and mix to make sure all the flour is incorporated
- Grease the Madeline Mold with butter and carefully transfer the mixture into a piping bag
- Fill each mold with batter and place in the oven for 7-10 min.
For the Icing:
- In a small mixing bowl, mix the powdered sugar with lemon juice
- Add salt to the mixture and slowly pour olive oil and mix.
- The mixture shouldn’t be too thick but also cant be too liquid
- Once your Madeline are out of the oven, lets them cool slightly and dip them into the icing mixture (for those who do not like icing on their Madeline can skip this step)
