Lamb chop pot roast

So just before I would like to tell you how I arrive to this idea. If I buy lamb chop it definitely to make it on the barbecue. How I just love barbecue lamb chop so tasty so juicy. In short, we did not have any more propane. Yes, we had the lamb but no barbecue. And the thing is, I do believe that the crockpot is for sure one of the best and easiest way to cook a piece of meat with success. I had never gone wrong with the slow cooker. And for one more time, the result was spectacular!!!

So here we go I use 12 lamb chops,knowing that I served 2 per person

12 lamb chops

1 onion

Thyme

4 cloves of garlic

4 small carrot

3 big potatoes

1 celery heart

1 red pepper

3 Tbsp tomato paste

2 cup chicken broth.

Proceed

Put the lamb chops on the bottom of the slow cooker dish. Cut all the veggies in a shank and put them on top of the lamb chops. In a small bowl mix together the tomato paste chicken broth salt and pepper. Pour it all on top of the veggies and let it cook on high for 4 to 6 hours or on low for 6 to 8 hours. Maybe give it a stir in the mid cooking. I know it sounds so easy that you are wondering if it can be good. Well, let me tell you it was such a delightful meal. I mashed the potatoes to serve put on top 2 lamb chops the veggies and some sauce. Simple flavorful from the thyme and lamb. The dish was just a simple wonder.
