A nice and easy dessert when you have a busy day but still need some sweet for your entourage ! Lactose-free and with so many different ways to flavor it! But for now let’s talk about the hazelnut one! Nutty fluffy with this amazing meringue flavor!! Another great recipe that I love to serve after a meat meal! So fancy and so pretty just as is!
Ingredients
5 oz sugar (140g)
5 oz hazelnut powder (140g)
5 eggs
2 tbsp flour
1 tsp baking soda
1 tsp vanilla extract
A pinch of saltFor the filling
Chocolate spread Or jam!!
Methode
Separate the white from the yolk and place the white in a mixing bowl. Whisk at high speed until it forms a nice pick. Set aside. Place the yolks into your prep bowl along with the sugar and whisk. The mixture should be slightly white and smooth. Add the hazelnut powder.Whisk until all combined. . It should be thick and compact. Add the flour, baking powder and vanilla extract. Whisk. Now with a wood spoon take a small quantity of the egg whites and whisk it in the hazelnut prep. Whisk from the bottom to the top. Only. It shouldn’t be so easy because of the thick texture of the hazelnut Prep, but it will smooth with the egg whites. Once it is fully incorporated, add the rest of the whites and continue mixing from the bottom to the top. The batter should be smooth.
Take a tin baking pan Covered with parchment paper or a silicone thin pan and pour the rulada batter in. With a spatula level it. Bake it at 350F/ 180C or 12-15 minutes maximum! Or until slightly golden. As soon as it is out of the oven,take a clean large kitchen towel. Wring it out completely and place it on top of the rulada. Flip it. Gently remove the parchment paper from the bottom and close the clean wet towel all around the rulada. Let it rest for about 10 minutes. After that, open the clean wet towel and fill the whole surface of the rulada with strawberry jam or chocolate spread. Then sprinkle the rest of the hazelnut powder all over.
And some icing sugar as well. With the help of the wet towel roll the rulada and press it to close it tightly at each roll before continuing on rolling. Once it all rolled thinly, place the rulada on a serving plate. Sprinkle some icing sugar and if you feel like serving it with some whipped cream and fresh strawberries. Rulada are so easy and fast to do first of all. And then the fun part of it, it’s that you can fill them in so many different ways. You’ll never get bored of making it. Chocolate ganache, strawberry cream , white chocolate and pistachio cream. Plain with just jam or chocolate will always stay the classic that everybody loves ! “Bonne cuisine à tous!”
