Delicious recipe. A little skeptical in the beginning to use oil but it came out so delicious! Don’t give up on the icing. It’s so delicious and give so much to the brownie that it will be a shame to not give it a try! You can avoid nuts if you are allergic all, if you don’t like this little extra bite. And if you do use nuts, you can use as well pecan instead of walnut. Allez c’est partit!!!

Ingredients
3/4 cup refined coconut oil or canola (170g)
3/4 cup granulated sugar( 150g)
1/2 cup brown sugar – packed (90g)
1 tsp. vanilla extract
2 large eggs + 1 yolk
2/3 cup cocoa powder – sifted (65g)
1/2 cup all-purpose flour (70g)
1/2 tsp. coarse sea salt
1/4 tsp. baking powder
1/4 tsp. espresso powder
1/2 cup coarsely chopped chocolate (100g)
½ cup roughly chopped walnut (100g)
For the glaze
2 tbsp peanut butter (the creamy one) Melted 10 sec alternating in the microwave
½ cup chocolate chip melted 10 sec alternating in the microwave (100g)
INSTRUCTIONS
Preheat the oven to 350F degrees. 180C
Line a 8×8-inch metal baking pan with parchment paper, set aside. ( 20x 20 cm)
In the bowl of a stand mixer fitted with the paddle attachment or a large mixing bowl (using a hand held mixer), add the oil, sugars and vanilla. Mix on medium speed until combined, about 1 minute.
Add the eggs and yolk one at a time mixing after each addition, then mix for 30 seconds. Let the mixture rest for 3 minutes. Then repeat by mixing
For 30 seconds. Repeat two more times.
In a medium mixing bowl whisk together the cocoa powder, flour, salt, baking powder, and espresso powder (optional). Slowly add the dry ingredients along with the chopped chocolate and walnuts and continue mixing for 30 seconds after the last white streak disappears.
. Pour the batter into the prepared pan and place in the oven to bake for 25-,35 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Remove from the oven and allow to cool in the pan for about 30 minutes before. Prepare the chocolate in one bowl and the peanut butter in another bowl. Once the brownie has cooled down, take it off the pan and place it on the serving plate.
Pour the melted chocolate into the brownie, and some dollop of melted peanut butter here and there. Swirl to design and It’s ready to enjoy, just cut some nice serving size squares and serve it with vanilla or rum ice cream. Its just delicious!!
