The outstanding chocolate chips cookie bar!

The recipe called for chocolate chip cookies, but I thought that to make it a big square pan would be fun! And yes, indeed it came out so yum yum!!! Delicious! Not too sweet! I was skeptical about canola oil, but in fact it give a very nice texture to the crunch. But i also used olive oil and coconut oil. Yes the taste change from an oil to another, even the color! But the taste is as delicious!

Thank to my 4 children who just jumped on it! I would have finished it all by myself!! It’s a little bit “cliché ” but this is so true!!!!!! This little treat can be cruel!! Lol! I wait for you to give me your though on this one.

Chocolate chips cookies bar

Makes 12 cookies or one square cookies bar

Ingredients

2 cups all-purpose flour 250g

1 teaspoon baking soda

½ teaspoon kosher salt

1 cup bittersweet chocolate chips 170g

1 cup semisweet chocolate chips 85g

½ cup firmly packed dark brown sugar 110g

½ cup granulated sugar 100g

½ cup canola oil 100g ( you can use coconut oil, olive oil, peanut oil)

¼cup water 60

2 teaspoons pure vanilla extract

Method 

In a medium bowl, whisk together the flour,  baking soda and salt. Toss with the chocolate chips. In a second medium bowl, break up the brown sugar, making sure there are no lumps. Add the granulated sugar, oil, water, vanilla and whisk to combine. Add the flour mixture and mix until just combined (there should be no streaks of flour). Line a square baking pan with parchment paper. Pour the dough into it and with a spatula just flat it down evenly. Freeze, 30 minutes or up to two months.


Bake at 375 F 10 to 13 minutes total . (It should be soft but they continue on cooking while they cool down ). Cool completely on wire racks. Remove the square cookies from the pan and cut it into small squares. Store in a cookie’s box up to a week.
