1 pound chicken breast 500g
2 tbsp cornstarch
2 tbsp red curry and if you don’t have then prepare your own see not at the end of the post!
2 tbsp soy sauce
2 tbsp sesame oil
1/2 cup water 100ml.
Preparation
Prepare your chicken. Pet dry with a clean kitchen paper towel and cut your chicken breast into strip or cube. Place them in a bowl and mix in the cornstarch. Well coated each piece of chicken. Add some cornstarch if necessary. In a large saute pan heat up couple tbsp of cooking. And be ready with the curry paste and chicken as this action needs to happen fast. Once the oil is hot start by putting the red curry paste in and right away the chicken. Quickly coat all the chicken pieces with the red curry. Low the heat to medium high and stir fry for about 3-4 minutes. The chicken needs to be slightly colored. Add now the soy sauce and sesame oil, stirring all the time. Finish with the water, pour it in, mix to combined all those flavors. Lower the heat to medium-low. Cover and let it simmer for about 10-12 minutes or until chicken tender. Be aware, as you probably know, chicken breast does not require a lot of cooking time. In the meantime prepare your mango salsa.
1 shallot
1 mango
1 avocado
1 cucumbers
A few sprigs of cilantro
The dressing
1 shallot finely slices
1 tbsp vinegar
1 tbsp honey
3 tbsp sesame oil
1/2 tbsp lemon juice
2 tbsp olive oil
Salt and pepper to taste
Some sesame seeds to toss the salad with
Wash the cucumber. Cut it in half lengthwise and cut it then into 5-6 strips lengthwise as well. Cut them then into small cubes. Place them in a bowl Take your avocado. Cut it in half. Take off the seed. Take off the skin. Cut each halves into strips and then into cubes. Place it with the cucumber. And then same for your mango. The seed of the mango can’t be taking off. Just will have to cut the mango into halves placing your knife as closer from the see as possible. Then continue on cutting the fruit from the around of the seed .Remove then the skin and cut the mango into cubes. Place it along with the other fruits . They should be all the same calibers. For the dressing . In a small bowl pour on all the condiments and shallots mix well to combine and toss the salad with.. Mix well and sprinkle some fresh chopped cilantro.
I prepare some jasmine rice with it . A sticky rice should be interesting as well. Place the rice and the chicken. Top the whole with the salsa a little sprinkle of sesame seed and Voila !it is ready to serve. It is delicious juicy and very unusual. To make again for sure!
