If you know me yet, you know that I just love salad. Each meal should have It salad to go with. A « salade de table » like they would say in France. Let’s try to out Barley in the spotlight. A grain that I usually use for stew or soup. This time I tried to combined it with some fresh vegetables and a nice and robust tahini dressing. Voilà let’s get into it. I just find it tasty and unusual. A way to make kids eat some veggies as well. Let’s go!!

Ingredients
2 cup cooked barley
1 large tomato
1 English cucumber
1/2 white cabbage
1 bunch cilantro
For the vinaigrette
3 tbsp pure tahini
1 Tbsp honey
1 small Clove of garlic
1/2 juice of lemon
4 tbsp iced cold water
Salt to taste
Proceed
Wash all your vegetables. Cut the tomato in half then in stripe, then in small dice. Take the cucumber cut it in half and then in stripe and in small dice as well. Take the white cabbage and try to chop it as thinly as you can, as well as for the cilantro. Take note all the veggies and put them in a large salad bowl.
Prepare your vinaigrette
I like to use a small blender when it comes to work, we tahini. Take all the ingredients except for the water and blend it until smooth and all combine. Add then progressively add the water until nice and thick consistence. When it’s time to serve, pour the vinaigrette into the vegetable. Toss it well and out will be fresh to serve.
