What a beautiful idea this salad is! Full of flavors. Those bites from the dates and nuts are just outstanding. A nice robust vinaigrette to go along. It would be serve along with fish or with a nice roasted piece of meat. And from my part just as is because i am such a salads lovers that nothing more than some crackers and a nice piece of brie would do! Let’s get to the recipe.

Ingredients for 4 persons
For the vinaigrette
4 tbsp Dijon mustard
2 tbsp white vinegar.
3 tbsp neutral oil
3 tbsp olive oil
1 small shallot
Salt and pepper to taste
For the green and dry fruits
1 whole green lettuce of your choice ( romaine, Green leaves, iceberg …)
1- 2 endives
1/3 cup pitted dates ( Medjol are from far my favorites)
1/4 cup walnut ( pecan, slivered almond, cashew…)
Optinal a handful of sesame
This is the mustard i usually work with. The French one oui! Oui!
Proceed
In a large salad bowl mix together all the ingredients for the vinaigrette. Whisk energetically to well incorporate all ingredients. Taste adjust and set aside.
Prepare your greens
Wash the Lettie et and endives. Take off the first layers of the shallots. Chop the lettuce and endives to a nice bites size. Very thinly slice the shallot and add it all to the vinaigrette. Chop the dattes and roughly the nuts and add them just before serving.
