A quinoa salad that feels like a slaw! An outstanding mustard vinaigrette that will be part of your staple in your recipe book. I am fascinated by vinaigrette. This one is exceptional! All those shredded veggies blend in it!!! Just such a nice salad that can go along fish or meat roast. Just as is, along with crackers and cheese! Allez C’est parti!
Mustard slaw
1/4 of red cabbage
1/4 of white cabbage
2 carrots
2 fennels
½ cup cooked quinoa or burgule (80 a 90 g)
For the vinaigrette
1 large shallot
2 tablespoon of mustard
4 tablespoons of vinegar
4-5 tablespoon of neutral oil
4-5 Tablespoon of olive oil
Salt and pepper to your taste
Wash then grate the carrots and the 2 cabbages. Then for the fennel try to slice them as finely as possible if you like to work with the mandolin it will be just perfect. Place all the cut ingredient in a large salad bowl and add the cooked quinoa. Set aside. Prepare the vinaigrette. If you’re whisking it by hand then be sure to mince the shallots really well. Then add the rest of the ingredients finishing with the oils.
Whisk vigorously to achieve a smooth vinaigrette. Taste! Some people like it with more vinegar and some with more olive oil! Pour on the veggies ! Toss well and serve! Just delicious! If you have some tortilla chips around, bring them along, its so tasty!
