My so delicious Chocolate mousse…

The classic! This is the one I do all the time!

I never realized how much chocolate mousse is appreciated! Easy and quick, this little dessert is always welcome. In a lactose-free version since I used milk-free chocolate. You can decline it in several other ways. White chocolate!!! Sprinkle with chocolate chips or with fruits like raspberries or blueberries! Light and tasty! A nice little recipe to have on hand.

Ingredients

4 eggs separated.

6 oz dark or lactose-free chocolate (180g) I always like to add a little

2 tbsp of sugar (30g)

1 pinch of salt

Method

Pour the chocolate into a small saucepan and melt it in a bain-marie. Before starting my egg whites, I like to clean my bowl and whisk with vinegar. Separate the whites from the yolks. Place the whites in the bowl in question then the yolks in another bowl, medium will suffice. Start by whipping your egg whites at high speed from the start. Add a pinch of salt and whisk until the whites form a stiff peak. In the yolks, pour the sugar and with a small whisk, mix until the sugar is completely dissolved and the mixture slightly whitish. Take your melted chocolate and pour the yolks into it, whisking vigorously to incorporate the two additions together. Take your snow whites (do we call it like that?!)  and using a spatula take a small amount of chocolate and mix it with the whites. Mix from the bottom up, starting in the middle of the bowl and lifting your spatula up the center. When this is well incorporated together you can then incorporate the rest of the chocolate and mix well until everything is homogeneous. But always with the same movement as we don’t want to break the whites. The texture should be smooth and superbly shiny. Transfer to a large or individual ramekin, cover with plastic wrap and let rest in the fridge for at least 4 hours.

To serve you can grate some chocolate on top with a small raspberry or two and a light dash of cacao powder. It is delicious.
