Cauliflower taboulé

I love to make lots of salad for dinner on Friday evening. After the great preparations of the main dishes, salads are like relaxation, a little moment of rest. And the more time passes, the more I create small salads that make everybody happy. This time it’s a new cauliflower salad. Excellent.

For 6-8 people (knowing that it is a salad among many others on the table.

1 cauliflower

1 cucumber

1 Shallot

1 bunch of fresh coriander

1 bunch of curly parsley

1 nice handful of fresh mint

For the vinaigrette

1 lemon zest

The juice of 1 lemon

1 Tsp cumin

1 Tsp salt

1 1/2 Tsp pepper

1 Tsp pepper flakes

5 to 6 cases of olive oil (Add more or less depending on how much you like the taste of lemon)

When I work with cauliflower I soak it in a bowl with lots of water and vinegar for a few minutes. Then rinse it off with lots of water and drain it on a clean cloth. Wash all the herbs well and finely chopped them with a knife. Put them in a large bowl. Cut the cucumber into small dice and the cauliflower into very thin strips. It should look like big rice seeds.

For the dressing, you just have to mix all the ingredients together and finish with a small pinch of pepper flakes. Seasoned the cauliflower and herb mixture with the dressing. This salad and even better the next day.
